It’s that time of the year where we start baking cookies. Most cookies can be frozen and used for the Holiday’s but I like to test them out myself to make sure they still work.
So my first experiment was with Amy’s Cookies (Amy Cooper) from Recipes for Life.
I always change up recipes so here is my spin on these Awesome cookies.
First, with love measure 5 cups of oatmeal and blend in food processor till it is powdered. Set aside.
Cream together 2 cups Butter (I use a mixture of real butter, and some home-made butter) and 2 cups each brown sugar and white sugar (I use Via). Add 4 eggs (fresh chicken eggs) and Mexican Vanilla. Add 4 cups flour, oatmeal, 1 tsp salt, 2tsp baking soda, add chocolate chips and grate 1-8oz Hershey chocolate bar. Add any nuts if you wish. Roll into balls or use Pampered Chef small scoop. place 2 inches apart and bake for 10 minutes at 375 degrees.
I froze the remainder of dough so I can bake fresh cookies at anytime!
